How do you all feel about eggs? A friend of mine lives with two personal trainers and they all encourage the consumption of eggs. Eggs for dinner, eggs for lunch, eggs at any meal of the day. Those among us who look forward to a big plate of scrambled eggs and cheese on a Saturday are not looking at these bits of protein with the proper respect, however.

Eggs have amazing protein, but the yolks also have a good amount of fat. Plus when you add the cheese that some of us (guilty) enjoy, you might a well just forget about that workout you just did. Plus, the whole point of my need to have a quick meal is that I don’t have the time to be running home after the gym to fry up some eggs. One suggestion? Hard boil those babies.

Well, this one will not work for me, as I am not into eggs enough to hard boil a ton of them and take a couple with me each morning to eat with salt-and-pepper in my car. I would much rather eat my apple than ingest that much egg - just not my flavor. I’m giving this one more shot. Wish me luck.
